POT BREAD

Prep time: 20 minutes plus 40 minutes for rising

Baking time: 50 minutes

Makes 1 loaf

Ingredients

  • 6 cups (1½ litres) cake flour, plus extra for kneading
  • 1 packet instant dry yeast
  • ¼ cup (60ml) sugar
  • 1 teaspoon (5ml) salt
  • 2¾ cups (690ml) warm water
  • oil for greasing

Method

  1. In a large bowl, combine the dry ingredients. Make a well in the centre and pour in the water, stirring. Combine well to form a dough.
  2. Knead on a lightly floured surface until elastic, 6-8 minutes.
  3. Lightly grease a bowl with oil and place dough in. Cover and leave in a warm spot till doubled in size, about 30 minutes.
  4. Light the fire or braai. Grease a large cast-iron pot and the inside of its lid.
  5. Knock down the dough by punching it lightly and shape it into a ball. Place it in the pot and leave to rise, covered, for 10 minutes.
  6. Place pot on braai, with a few coals on the lid, and bake for 50 minutes.
