Ingredients
- 1.5kg beef roast
- 50g unsalted softened butter
- 4 cloves garlic, minced
- 1 tablespoon chopped fresh rosemary
- ½ tablespoon chopped fresh oregano leaves
- 2 teaspoons salt
- 1 teaspoon freshly cracked black pepper
Method
- Preheat oven to 180˚˚C.
- In a small bowl, combine butter, garlic, rosemary, oregano, salt, and pepper. Mix until thoroughly incorporated.
- Rub the mixture all over and around the roast.
- Transfer it to the oven and roast for 30 minutes, checking often.
- Reduce the heat and continue to roast until medium to rare.
- Remove from the oven and let the roast rest for 20 to 30 minutes before cutting.
- Cut and serve with your desired gravy and vegetables.
