Preparation time: 1 hour 30 minutes


  • 1.5kg beef roast
  • 50g unsalted softened butter
  • 4 cloves garlic, minced
  • 1 tablespoon chopped fresh rosemary
  • ½ tablespoon chopped fresh oregano leaves
  • 2 teaspoons salt
  • 1 teaspoon freshly cracked black pepper


  1. Preheat oven to 180˚˚C.
  2. In a small bowl, combine butter, garlic, rosemary, oregano, salt, and pepper. Mix until thoroughly incorporated.
  3. Rub the mixture all over and around the roast.
  4. Transfer it to the oven and roast for 30 minutes, checking often.
  5. Reduce the heat and continue to roast until medium to rare.
  6. Remove from the oven and let the roast rest for 20 to 30 minutes before cutting.
  7. Cut and serve with your desired gravy and vegetables.
