Mukokoroshi (Hard Body Chicken)

  • Chicken pieces
  • Black pepper
  • 1 Tsp Paprika
  • 1 diced onion
  • Water
  • Salt
  • Spring onion (optional)

Cooking Instructions

  • Season chicken with black pepper and brown for a few minutes then set aside.
  • In the same pot, add onion, and paprika and sauté for a few minutes.
  • Return the chicken to the pot add 2 cups of water and simmer over medium for 1 hour, stirring continuously.
  • After an hour, add salt, and one cup of water and continue to cook for another hour or until chicken is tender.
  • Finally, add in spring onion and simmer for 2 minutes.
  • Best served with dumplings or pap.
