MINT CHOCOLATE ICE CREAM

Serves 8-10

Preparation time: 20 minutes

Freezing time: 2-3 hours

Ingredients

  • 2 cups heavy whipping cream
  • 2½ teaspoons peppermint extract
  • 385g sweetened condensed milk
  • 1½ drops green food colouring
  • 100g sweet chocolate bar, finely chopped

Method

  1. Whip whipping cream on medium speed in a large bowl until it becomes stiff.
  2. Add the sweetened condensed milk, food colouring, and peppermint extract. Gently fold in until everything is well combined.
  3. Add the chopped chocolate and fold together until well combined.
  4. Spoon the ice cream into a shallow container or a loaf pan and cover with plastic wrap paper.
  5. Freeze for at least 3 hours, or until solid. Let it sit at room temperature for about 5 minutes before serving.
