These cookies look like balls of snow because they are dusted in icing sugar. They pair perfectly well with a dark roast coffee or masala chai.
INGREDIENTS
- 220g unsalted butter, softened
- ½ cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 1/3 cups cake wheat flour
- ¼ teaspoon cinnamon powder
- ½ cup icing sugar for dusting
- pinch of salt
METHOD
- Preheat your oven to 180°C. Grease and line a baking tray then set aside.
- In a bowl, cream the butter and brown sugar together until pale and fluffy.
- Add the egg and vanilla extract. Mix well.
- Sift in the flour, salt and cinnamon powder. Mix until a soft dough is formed.
- Wrap the dough with clingwrap and chill in the fridge for 1 hour.
- After an hour, remove the dough from the fridge and break small pieces off and shape into balls.
- Place them on the greased baking tray and bake for 12-15 minutes until lightly golden brown.
- Cool for 5 minutes on a baking stand.
- Dust generously with icing sugar.
