KOURABIETHES (Greek Almond Biscuits)

INGREDIENTS

  • 250g butter (room temperature)
  • 80ml castor sugar
  • 500ml flour
  • 2ml salt
  • 100g ground almonds
  • 5ml almond essence
  • 10ml brandy
  • extra icing sugar for dusting

METHOD

1. Beat the butter and castor sugar together with an electric mixer. Add the rest of the ingredients (except icing sugar and brandy) to form a smooth dough.

2. Roll the dough into small balls and place on a greased baking sheet, or shape into crescents.

3. Bake at 170°C for about 18 minutes (biscuits should not be brown).

4. Dust with icing sugar while still warm.

5. Cool on a rack and store in an airtight container.
