PEPPERMINT CRISP TART CAKE

Ingredients

  • 4 large eggs
  • 1 cup sugar
  • 1¼ cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon caramel essence 
  • ½ cup milk
  • ¼ cup oil

Method

  1. Beat the eggs and sugar until light and creamy.
  2. Add the oil, beat slightly then add the milk.
  3. Add the dry sifted ingredients and beat well.
  4. Pour into 2 greased round pans.
  5. Bake at 180﮿C for approximately 20-25 minutes.
  6. Allow to cool. 

Ingredients for the caramel filling 

  • 1 cup Caramel Treat
  • 1 cup Nestle dessert cream
  • Grate or roughly chop 1 slab peppermint crisp 

Method

  1. Beat the Nestle and caramel until smooth.
  2. Add the chocolate and mix.
  3. Top the one cake round with the above. Place the other round cake on top.
  4. Finish off with caramel treat, whipped cream, mint crisp and mini tennis biscuits. 
  5. Refrigerate and enjoy
