French berry

Ingredients

  • 2 large eggs
  • 1 tsp sugar
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 1 slice bread of your choice
  • 1 Tbsp olive oil
  • ½ cup raspberries
  • ½ cup blueberries
  • 1 tsp honey
  • 1 tsp icing sugar

Instructions

1. Beat the eggs in a bowl with the sugar, milk and vanilla extract.

2. Place the slice of bread on a plate and gently pour over the egg mixture.

3. Heat the olive oil in a frying pan over medium heat and, using a spatula, lift the bread into the pan. Cook on both sides until golden brown.

4. Serve the French toast topped with berries, drizzled with honey and dusted with icing sugar. Just gorgeous!

Notes

I can’t take any credit for this breakfast; it goes to an important guy in my life, my son. He loves to create dishes that are different. He adds vanilla extract to his egg mixture so that the fragrance alone takes you halfway to heaven. The berries and icing sugar provide the finishing touches, like make-up on an already beautiful face.
