SHAKSHUKA

BREAKFAST

Ingredients

  • 4-5 large tomatoes, or 1 tin of crushed tomatoes
  • ½ cup green pepper
  • ½ a medium onion
  • ¼ cup of green onion
  • 3-4 eggs
  • salt and pepper
  • 2 teaspoons cooking oil
  • ciabatta or sourdough bread

Method

  1. Cut 4-5 tomatoes into cubes and cook them with diced onions and diced green pepper. Cook for about 7-10 minutes and crush the tomatoes.
  2. Season with salt and pepper to taste.
  3. After cooking, make 3-4 circles in the tomato relish and add the eggs in each circle. Cover with a lid and allow it to steam for about 3-5 minutes.
  4. Toast the sourdough or ciabatta bread and serve with the Shakshuka.
