BREAKFAST
Ingredients
- 4-5 large tomatoes, or 1 tin of crushed tomatoes
- ½ cup green pepper
- ½ a medium onion
- ¼ cup of green onion
- 3-4 eggs
- salt and pepper
- 2 teaspoons cooking oil
- ciabatta or sourdough bread
Method
- Cut 4-5 tomatoes into cubes and cook them with diced onions and diced green pepper. Cook for about 7-10 minutes and crush the tomatoes.
- Season with salt and pepper to taste.
- After cooking, make 3-4 circles in the tomato relish and add the eggs in each circle. Cover with a lid and allow it to steam for about 3-5 minutes.
- Toast the sourdough or ciabatta bread and serve with the Shakshuka.
