  • 2 cooked chicken breasts
  • 1 Handful of Baby spinach
  • 1 Mango, diced
  • 1/4 Cup Cherry tomatoes
  • 1/4 Cup English cucumber
  • 1/3 Red onion, diced
  • 1 Tbsp Pomegranate rubies (optional)
  • 1 Tbsp Parsley

For the Honey Lemon Dressing

  • Olive oil
  • Juice of 1 lemon
  • 1 Tbsp honey
  • 1 Tbsp Dijon mustard
  • 1 Garlic clove, minced
  • 1 Tsp parsley
  • Salt & pepper, as needed


  • Add baby spinach to a large salad bowl.
  • Top your spinach with slices of chicken, diced mango, cherry tomatoes, cucumbers, onion, pomegranate, and parsley. Then, set it aside while you mix the dressing.
  • In a separate mixing bowl whisk together the olive oil, lemon juice, honey, Dijon mustard, garlic, parsley, salt, and pepper.
