CHICKEN MANGO SALAD RECIPE
Ingredients:
- 2 cooked chicken breasts
- 1 Handful of Baby spinach
- 1 Mango, diced
- 1/4 Cup Cherry tomatoes
- 1/4 Cup English cucumber
- 1/3 Red onion, diced
- 1 Tbsp Pomegranate rubies (optional)
- 1 Tbsp Parsley
For the Honey Lemon Dressing
- Olive oil
- Juice of 1 lemon
- 1 Tbsp honey
- 1 Tbsp Dijon mustard
- 1 Garlic clove, minced
- 1 Tsp parsley
- Salt & pepper, as needed
METHOD:
- Add baby spinach to a large salad bowl.
- Top your spinach with slices of chicken, diced mango, cherry tomatoes, cucumbers, onion, pomegranate, and parsley. Then, set it aside while you mix the dressing.
- In a separate mixing bowl whisk together the olive oil, lemon juice, honey, Dijon mustard, garlic, parsley, salt, and pepper.
