AVOCADO TOAST WITH SCRAMBLED EGG

Serves 1

Ingredients

  • unsalted butter
  • 2 slices of bread
  • 2 eggs
  • cheese (optional)
  • salt
  • 1 avocado
  • dill for garnish
  • chili flakes

Method

  1. Spread butter on both sides of the bread and toast on a pan until golden.
    1. In a bowl, add two eggs, the salt and then whisk.
    1. In a pan, add butter. Once melted, add the eggs, and cook on low heat. Use a spatula to scrape the eggs and let them cook completely.
    1. You can add some cheese if you prefer.
    1. Slice up an avocado, or mash it, and spread it on the bread. Add the scrambled eggs and chili flakes and garnish with dill.
    1. Serve with fruit of choice.
