Ingredients
- 2 ripe bananas, mashed
- ½ cup oil
- 2 eggs, room temperature
- ½ cup milk, room temperature
- ½ cup brown sugar
- 1 teaspoon vanilla essence
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- raisins (optional)
Method
- Preheat oven to 160C.
- Line a baking dish with baking paper.
- In a bowl, mash two ripe bananas.
- Add oil, eggs, milk, sugar, and vanilla to the bananas and mix well.
- Add flour, baking powder, baking soda and salt. Mix until well incorporated, making sure not to over mix.
- You can add raisins, but first coat them with flour then add to the batter.
- Pour the batter into a baking dish and bake in a preheated oven for 50-60 minutes.
- Insert a wooden skewer in the centre of the bread once ready; if it comes out clean, the cake is ready!
- Cool for an hour, slice it up and serve.
