Serves 3-4


  • 2 ripe bananas, mashed
    • ½ cup oil
    • 2 eggs, room temperature
    • ½ cup milk, room temperature
    • ½ cup brown sugar
    • 1 teaspoon vanilla essence
    • 1½ cups all-purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ¼ teaspoon salt
    • raisins (optional)


  1. Preheat oven to 160C.
    1. Line a baking dish with baking paper.
    1. In a bowl, mash two ripe bananas.
    1. Add oil, eggs, milk, sugar, and vanilla to the bananas and mix well.
    1. Add flour, baking powder, baking soda and salt. Mix until well incorporated, making sure not to over mix.
    1. You can add raisins, but first coat them with flour then add to the batter.
    1. Pour the batter into a baking dish and bake in a preheated oven for 50-60 minutes.
    1. Insert a wooden skewer in the centre of the bread once ready; if it comes out clean, the cake is ready!
    1. Cool for an hour, slice it up and serve.
