BBQ sticky Chicken

Serves 9


  • 9 pieces of chicken (drumsticks and thighs)
  • 1 tablespoon chicken spice
  • 1 teaspoon smoked paprika
  • 1 teaspoon white pepper
  • ½ fresh lemon
  • 1 garlic clove (minced)
  • 2 tablespoons olive oil
  • 1 cup BBQ marinade
  • 1 teaspoon Dijon mustard
  • 1 tablespoon brown sugar (can be replaced with honey)
  • 1 tablespoon mayonnaise
  • thyme
  • parsley
  • sesame seeds


  1. Preheat the oven to 190C.
  2. Pat the chicken dry with a paper towel and season with chicken spice, white pepper and garlic.
  3. Add the thyme, a squeeze of fresh lemon and garlic, and then mix well.
  4. Cover with cling wrap and let the chicken chill in the fridge for 20 minutes (do not freeze).
  5. After 20 minutes, remove from the fridge and arrange the chicken on a baking tray. Grill for 35 minutes (tip: always turn the sides of your chicken after every 8 minutes to avoid it from getting burnt).
  6. For the marinade, in a medium bowl add BBQ marinade, Dijon mustard, mayonnaise and brown sugar and stir until well mixed.
  7. When the chicken is cooked through, baste the chicken with a marinade using a basting brush.
  8. Return to the oven for 2 minutes on each side after basting to ensure that the marinade sticks to the chicken.
  9. Garnish with sesame seeds and fresh parsley.
  10. Serve with savoury rice or fresh garden salad.
