Ingredients
- 9 pieces of chicken (drumsticks and thighs)
- 1 tablespoon chicken spice
- 1 teaspoon smoked paprika
- 1 teaspoon white pepper
- ½ fresh lemon
- 1 garlic clove (minced)
- 2 tablespoons olive oil
- 1 cup BBQ marinade
- 1 teaspoon Dijon mustard
- 1 tablespoon brown sugar (can be replaced with honey)
- 1 tablespoon mayonnaise
- thyme
- parsley
- sesame seeds
Method
- Preheat the oven to 190C.
- Pat the chicken dry with a paper towel and season with chicken spice, white pepper and garlic.
- Add the thyme, a squeeze of fresh lemon and garlic, and then mix well.
- Cover with cling wrap and let the chicken chill in the fridge for 20 minutes (do not freeze).
- After 20 minutes, remove from the fridge and arrange the chicken on a baking tray. Grill for 35 minutes (tip: always turn the sides of your chicken after every 8 minutes to avoid it from getting burnt).
- For the marinade, in a medium bowl add BBQ marinade, Dijon mustard, mayonnaise and brown sugar and stir until well mixed.
- When the chicken is cooked through, baste the chicken with a marinade using a basting brush.
- Return to the oven for 2 minutes on each side after basting to ensure that the marinade sticks to the chicken.
- Garnish with sesame seeds and fresh parsley.
- Serve with savoury rice or fresh garden salad.
