Makes: 4 burgers
INGREDIENTS
- 1 large onion sliced into thin onion rings
- ½ cup of buttermilk
- 1 cup plain all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cumin powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 300ml oil for frying
- 4 beef patties
- 4 cheddar cheese slices
- 4 burger buns
- 250g back bacon
- lettuce
- tomato
- gherkins
For the burger sauce
- ½ cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon tomato sauce
- 1 tablespoon chilli sauce
- 2 tablespoons pickle juice
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
METHOD
- In a large bowl, add the buttermilk and sliced onion rings, making sure the onion rings are fully submerged.
- In a bowl, add the flour, baking powder, salt, pepper, cumin powder, onion powder, garlic powder and smoked paprika. Mix well.
- Remove your onion rings from the buttermilk and place them into your flour mixture ensuring to coat your onion rings completely in the flour mixture.
- Add oil to a pan and heat it over medium heat. Once the oil is hot, carefully add the onion rings and fry until golden brown and crispy. Remove them and place on a paper towel to drain any excess oil.
- For the sauce, mix together mayonnaise, Dijon mustard, tomato sauce, chilli sauce, pickle juice, smoked paprika and onion powder.
- Fry your burger patty to your liking and top with sliced cheese to melt. Then fry your bacon until crispy.
- Cut and toast your burger buns. Start layering your burger by adding a layer of sauce to the bottom bun, followed by lettuce, sliced tomato, the burger patty with cheese, sliced pickles and bacon. Top it off with crispy fried onion rings and more sauce. Finish with the top bun, then serve and enjoy!
