BEETROOT & CHERRY SALAD

INGREDIENTS

  • 2-4 medium beets, peeled and cut into ¼ inch half moons
  • 1 tablespoon olive oil
  • ¼ teaspoon each sea salt and black pepper
  • greens of choice
  • 1 cup red cherries, pitted and halved
  • ¼ cup crumbled feta
  • balsamic vinegar

METHOD

  1. Steam the beetroot for a few minutes. Add to a pan along with balsamic vinegar, salt and pepper, and dried rosemary.
  2. Roast for a bit (you can opt to roast in the oven as well).
  3. In your plate of choice add the greens, roasted beets, cherries and crumbled feta
  4. Serve and enjoy!
