INGREDIENTS
- 2-4 medium beets, peeled and cut into ¼ inch half moons
- 1 tablespoon olive oil
- ¼ teaspoon each sea salt and black pepper
- greens of choice
- 1 cup red cherries, pitted and halved
- ¼ cup crumbled feta
- balsamic vinegar
METHOD
- Steam the beetroot for a few minutes. Add to a pan along with balsamic vinegar, salt and pepper, and dried rosemary.
- Roast for a bit (you can opt to roast in the oven as well).
- In your plate of choice add the greens, roasted beets, cherries and crumbled feta
- Serve and enjoy!
