Serves 3-4
INGREDIENTS
- 30ml cooking oil
- 1 onion, chopped
- 1 red pepper, chopped
- 1 tablespoon crushed garlic
- 2 teaspoons cumin
- 2 teaspoons coriander
- 1 teaspoon cayenne pepper
- 2 teaspoons paprika
- 1 can chopped tomatoes
- 4-6 eggs
- Salt and pepper, to taste
METHOD
- In a large pan over medium heat, add cooking oil, onions and peppers. Sauté until soft.
- Add garlic, cumin, coriander, cayenne pepper and paprika, cook for 2 minutes.
- Add in the tomatoes, season with salt and pepper. Bring the sauce to a simmer for 10 minutes.
- Once the tomatoes are cooked, use a spoon to create wells and crack eggs in the prepared wells. Cover the saucepan and cook eggs for 3 minutes or more if you want them well done.
- Serve with any favourite breakfast side (avocado, bacon or boerewors).
