BREAKFAST SHAKSHUKA

Serves 3-4

INGREDIENTS

  • 30ml cooking oil
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 1 tablespoon crushed garlic
  • 2 teaspoons cumin
  • 2 teaspoons coriander
  • 1 teaspoon cayenne pepper
  • 2 teaspoons paprika
  • 1 can chopped tomatoes
  • 4-6 eggs
  • Salt and pepper, to taste

METHOD

  1. In a large pan over medium heat, add cooking oil, onions and peppers. Sauté until soft.
  2. Add garlic, cumin, coriander, cayenne pepper and paprika, cook for 2 minutes.
  3. Add in the tomatoes, season with salt and pepper. Bring the sauce to a simmer for 10 minutes.
  4. Once the tomatoes are cooked, use a spoon to create wells and crack eggs in the prepared wells. Cover the saucepan and cook eggs for 3 minutes or more if you want them well done.
  5. Serve with any favourite breakfast side (avocado, bacon or boerewors).
