Serves: 4


  • 1 pack of boerewors
  • 1 pack of streaky bacon
  • 4 slices of processed cheese (cheese of your choice)
  • 4 eggs
  • 4 flour taco-size tortillas
  • 1 diced green onion stem
  • Tabasco (optional)
  • Salt and Pepper


  1. Start by removing the boerewors meat from its casing. Run a knife through the casing to easily remove the meat.
  2. Make 4 balls with the boerewors meat and set aside.
  3. Take each tortilla and press it firmly onto each boerewors ball for about 7-10 seconds. Spread the boerewors meat evenly around the tortilla. Make sure to leave some space at the edge of the tortilla, do this for all 4 tortillas.
  4. In a frying pan, fry the bacon pieces until cooked and crispy, remove from the pan and set aside. In the same pan, crack the eggs and cook them to your desired doneness and set aside.
  5. Cook your tortillas meat side down first for 2 minutes in a hot pan, then flip and cook for another 2 minutes. Remove the boerewors tortillas from the pan.
  6. While still hot, place a slice of cheese in the centre of the boerewors tortilla and allow it to melt.
  7. Add 2 bacon rashes and 1 egg on each tortilla, season with salt and pepper.
  8. Finish by adding some splashing tabasco over the eggs and bacon for extra flavour, garnish with the diced green onion.
