These savoury muffins are cheesy, fluffy, and are a great breakfast option for the whole family.
Serves: 6 (2 per person)
Ingredients
- 1 ½ cups (190g) flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 ½ tablespoons sugar
- 1 teaspoon red chilli flakes
- 1 tablespoon cajun spice
- 1 cup (30g) spinach – chopped
- ½ cup (50g) corn
- 1 cup (225g) mozzarella
- 1 cup (225g) cheddar
- 1 cup (250g) milk
- 1 egg
- 5 tablespoons butter – melted
- In a bowl, combine the flour, baking powder, salt, sugar, chilli flakes, cajun spice, corn, spinach, and cheeses.
- Mix until well combined and set aside.
- In another bowl/jug, whisk together the milk, egg, and butter.
- Add the wet ingredients to the dry ingredients and mix well.
- Grease a muffin tray and add the muffin mixture until ¾ full.
- Bake in a preheated oven at 180 degrees for 15-20 minutes.
- Serve and enjoy. These muffins are best served warm but can be popped into the airfryer to reheat.
