CHEESE, CORN AND SPINACH MUFFINS

These savoury muffins are cheesy, fluffy, and are a great breakfast option for the whole family.

Serves: 6 (2 per person)

Ingredients

  • 1 ½  cups (190g) flour
  • 1 tablespoon baking powder
  • ½  teaspoon salt
  • 1 ½  tablespoons sugar
  • 1 teaspoon red chilli flakes
  • 1 tablespoon cajun spice
  • 1 cup (30g) spinach – chopped 
  • ½  cup (50g) corn
  • 1 cup (225g) mozzarella 
  • 1 cup (225g) cheddar
  • 1 cup (250g) milk 
  • 1 egg
  • 5 tablespoons butter – melted 
  1. In a bowl, combine the flour, baking powder, salt, sugar, chilli flakes, cajun spice, corn, spinach, and cheeses. 
  2. Mix until well combined and set aside. 
  3. In another bowl/jug, whisk together the milk, egg, and butter. 
  4. Add the wet ingredients to the dry ingredients and mix well. 
  5. Grease a muffin tray and add the muffin mixture until ¾  full. 
  6. Bake in a preheated oven at 180 degrees for 15-20 minutes. 
  7. Serve and enjoy. These muffins are best served warm but can be popped into the airfryer to reheat.
