For the cherry syrup

  • 2 cups (450g) cherries, pitted
  • ¾ cup (188 ml) water
  • 1-2 teaspoons lime zest
  • ¼ cup (67ml) fresh lime juice
  • 3 tablespoons honey, adjust according to taste

For the drink

  • 60 ml gin
  • 150ml sparkling water
  • Sugar and lime zest, for the rim of the glass
  • ice
  • Thyme sprigs, for garnish


To make the cherry syrup

  1. Add all the ingredients to a saucepan on medium-high heat, once it starts to boil reduce the heat to low.
  2. Allow to cook until the cherries are soft and tender.
  3. Remove from the heat and allow to cool, then blend till smooth.
  4. Store in an airtight container for up to a week.

To assemble the drink

  1. Add ice to a glass, and pour in ½ cup (125ml) of cherry syrup.
  2. Top with sparkling water and gin. Stir and garnish with slices of lime and sprigs of thyme. Enjoy!
