Ingredients
For the cherry syrup
- 2 cups (450g) cherries, pitted
- ¾ cup (188 ml) water
- 1-2 teaspoons lime zest
- ¼ cup (67ml) fresh lime juice
- 3 tablespoons honey, adjust according to taste
For the drink
- 60 ml gin
- 150ml sparkling water
- Sugar and lime zest, for the rim of the glass
- ice
- Thyme sprigs, for garnish
Method
To make the cherry syrup
- Add all the ingredients to a saucepan on medium-high heat, once it starts to boil reduce the heat to low.
- Allow to cook until the cherries are soft and tender.
- Remove from the heat and allow to cool, then blend till smooth.
- Store in an airtight container for up to a week.
To assemble the drink
- Add ice to a glass, and pour in ½ cup (125ml) of cherry syrup.
- Top with sparkling water and gin. Stir and garnish with slices of lime and sprigs of thyme. Enjoy!
