INGREDIENTS
For the chicken
- 2 chicken breasts
- 1 teaspoon salt and pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon olive oil
For the sauce
- ¼ cup fresh basil
- ¼ cup fresh parsley
- 200g feta
- 1 teaspoon salt and pepper
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon garlic
- ¾ cup of mayonnaise
- 1 tablespoon lemon juice
Mixing the salad
- 300g cooked pasta
- ½ cup diced rainbow peppers
- ½ diced onions
- ½ cup cherry tomatoes
METHOD
- In a large bowl, add your chicken breast along with salt and pepper, olive oil, smoked paprika and garlic powder and mix well. Add your chicken to the air fryer at 200°C for 7 minutes a side or until cooked. Once ready remove from the air fryer and slice into bite-sized pieces.
- To a blender, add fresh basil, fresh parsley, feta cheese, 2 tablespoons of olive oil, honey, garlic, ¾ cup mayonnaise and lemon juice. Blend well until you form a silky-smooth dressing.
- In a large bowl, add cooked pasta along with your diced rainbow peppers, diced onion and cherry tomatoes. Add in your sliced chicken and top with the delicious basil and feta dressing. Mix well and sprinkle with crumbled feta.
