Ingredients
- 300g mussels
- 2 tablespoons of oil
- 1 medium onion, finely chopped
- 1 medium peeled and diced tomato
- 2 tablespoons of butter
- 1 tablespoon of tomato paste
- ½ cup dry white wine
- ½ cup Amarula
- 1 teaspoon chilli flakes
- 1 clove garlic, minced
Method
- Soak, scrub, de-beard, and rinse the mussels .
- In a large pot, heat the oil over medium-high heat. Add onion, garlic, tomato paste, and chilli flakes and stir-fry for 1-2 minutes.
- Add the diced tomato and bring the mixture to a boil. Simmer for about 10 minutes on low heat, stirring occasionally.
- Increase the heat to high. Add the dry white wine, Amarula, butter and mussels.
- Cover the pot and cook for about 6 minutes or until the mussels have opened.
- Serve.
