CHILLI MUSSELS

Serves: 2-3

Ingredients

  • 300g mussels
  • 2 tablespoons of oil
  • 1 medium onion, finely chopped
  • 1 medium peeled and diced tomato
  • 2 tablespoons of butter
  • 1 tablespoon of tomato paste
  • ½ cup dry white wine
  • ½ cup Amarula
  • 1 teaspoon chilli flakes
  • 1 clove garlic, minced

Method

  1. Soak, scrub, de-beard, and rinse the mussels .
  2. In a large pot, heat the oil over medium-high heat. Add onion, garlic, tomato paste, and chilli flakes and stir-fry for 1-2 minutes.
  3. Add the diced tomato and bring the mixture to a boil. Simmer for about 10 minutes on low heat, stirring occasionally.
  4. Increase the heat to high. Add the dry white wine, Amarula, butter and mussels.
  5. Cover the pot and cook for about 6 minutes or until the mussels have opened.
  6. Serve.
