CLASSIC FRENCH MADELEINES

INGREDIENTS

  • 150g butter
  • 2 eggs
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 60ml milk
  • 1 ¼ cups flour
  • ¼ teaspoon baking powder
  • Pinch of salt
  • 2 teaspoons orange zest

For the ganache (optional)

  • 100g white chocolate
  • 40ml heavy whipping cream
  • 1 teaspoon matcha tea powder

METHOD

  1. Preheat oven to 180°C.
  2. Melt butter, grease pan and set aside to cool.
  3. In a mixing bowl, beat eggs, sugar, vanilla and milk until creamy and set aside.
  4. In a large mixing bowl, sift flour, baking powder and salt.
  5. Add the egg mixture to the flour and combine well.
  6. Add cooled butter to the batter, and once combined well, add orange zest and mix until it is fully incorporated.
  7. In a well-greased Madeleine pan, scoop a tablespoon at a time of the batter and bake for 15 minutes.
  8. To make the ganache:  In a microwave-proof dish, melt the chocolate with the cream and stir until the chocolate is silky and glossy. Add the sifted matcha powder to avoid lumps and stir vigorously until well combined.
  9. Dip to coat madeleines halfway and enjoy!
