INGREDIENTS
- 2 tablespoons olive oil
- 80g butter
- 2 garlic cloves, minced
- half red onion, chopped
- 1 red pepper
- 1 green pepper
- 1 teaspoon coriander
- 1 teaspoon veggie seasoning
- ½ cup white wine
- pinch of salt and black pepper
- 2kg hake, portioned and cleaned
- 3 cups heavy cream
METHOD
- In a pan, heat oil, and brown hake on both sides. Remove the hake from the pan once done.
- Add butter to the pan. Once the butter is melted, add the onion, garlic, green and red peppers and fry.
- When the above is fragrant, add the coriander, veggie seasoning, salt and black pepper.
- Let it simmer for 5 seconds than add white wine and heavy cream.
- Once the sauce becomes heavy, place the hake fillets into it and simmer in an open pot for 5 minutes.
- Taste the seasoning and add more if necessary.
- Garnish with coriander and lemon and serve.
