This creamy prawn pasta recipe can be found on page 157 of the Chilli Chocolate Chefs’ cookbook, “Bringing It Home.”

INGREDIENTS
- 250g cooked spaghetti
- 2 tablespoons butter (for frying prawns)
- 20 prawns, shelled
- 1 teaspoon exotic Thai spice
- 1 tablespoon butter
- 3 teaspoons garlic, finely chopped
- 1½ cups milk
- 1½ cups fresh cream
- 1 tin tomato purée
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- ½ cup parmesan cheese
For garnish
- sour cream
- handful dhania (chopped)
METHOD
- Heat the butter in a pan and season the prawns with exotic Thai spice.
- Fry the prawns in batches in the butter for 2-3 minutes until they are tender.
- Remove the prawns from the pan and set aside to cool.
- Heat another tablespoon of butter in a new pan, add garlic and sauté for a minute.
- Add fresh cream, milk, tomato purée, salt, and black pepper.
- Add the cooked spaghetti and cooked prawns to the sauce and toss.
- Sprinkle with parmesan cheese, and garnish with seasoned sour cream and dhania.
- Serve hot.
