CREAMY PRAWN PASTA

This creamy prawn pasta recipe can be found on page 157 of the Chilli Chocolate Chefs’ cookbook, “Bringing It Home.”

Serves X

INGREDIENTS

  • 250g cooked spaghetti
  • 2 tablespoons butter (for frying prawns)
  • 20 prawns, shelled
  • 1 teaspoon exotic Thai spice
  • 1 tablespoon butter
  • 3 teaspoons garlic, finely chopped
  • 1½ cups milk
  • 1½ cups fresh cream
  • 1 tin tomato purée
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup parmesan cheese

For garnish

  • sour cream
  • handful dhania (chopped)

METHOD

  1. Heat the butter in a pan and season the prawns with exotic Thai spice.
  2. Fry the prawns in batches in the butter for 2-3 minutes until they are tender.
  3. Remove the prawns from the pan and set aside to cool.
  4. Heat another tablespoon of butter in a new pan, add garlic and sauté for a minute.
  5. Add fresh cream, milk, tomato purée, salt, and black pepper.
  6. Add the cooked spaghetti and cooked prawns to the sauce and toss.
  7. Sprinkle with parmesan cheese, and garnish with seasoned sour cream and dhania.
  8. Serve hot.
