Ingredients
For the salsa
- 1 tomato, deseeded & diced
- 1 onion, diced
- Cilantro, chopped
- squeeze of lime juice
- pinch of salt
For the sauce
- ¼ cup mayonnaise
- 2 tablespoons sriracha
- ¼ cup plain yogurt
For the fish
- 3 fish fillets
- ¼ cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ cup sparkling water
- tortillas
- coleslaw
Method
- Add tomatoes, onions, and cilantro to a bowl. Add a splash of lime juice and a pinch of salt. Mix everything together and chill in the fridge.
- In a bowl, add mayonnaise, sriracha and plain yogurt. Mix and chill in the fridge.
- Slice the fish fillet lengthwise. Lightly season each side with salt, rubbing it into the fish.
- In a bowl, add flour, all the seasoning and sparkling water gradually as you whisk until a batter forms that is neither too thin nor thick.
- Coat the fish with flour and then dip it in the batter, dredging off any excess.
- Fry until golden brown on both sides on medium high heat.
- Once ready, set aside.
To assemble
- Lightly char the tortillas in a pan on the stove.
- Spread the sauce on the tortilla.
- Add coleslaw.
- Add the crispy fish.
- Pour on some more sauce.
- Top off with salsa.
