CRISPY FISH TACOS

Serves 3

Ingredients

For the salsa

  • 1 tomato, deseeded & diced
  • 1 onion, diced
  • Cilantro, chopped
  • squeeze of lime juice
  • pinch of salt

For the sauce

  • ¼ cup mayonnaise
  • 2 tablespoons sriracha
  • ¼ cup plain yogurt

For the fish

  • 3 fish fillets
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ cup sparkling water
  • tortillas
  • coleslaw

Method

  1. Add tomatoes, onions, and cilantro to a bowl. Add a splash of lime juice and a pinch of salt. Mix everything together and chill in the fridge.
    1. In a bowl, add mayonnaise, sriracha and plain yogurt. Mix and chill in the fridge.
    1. Slice the fish fillet lengthwise. Lightly season each side with salt, rubbing it into the fish.
    1. In a bowl, add flour, all the seasoning and sparkling water gradually as you whisk until a batter forms that is neither too thin nor thick.
    1. Coat the fish with flour and then dip it in the batter, dredging off any excess.
    1. Fry until golden brown on both sides on medium high heat.
    1. Once ready, set aside.

To assemble

  1. Lightly char the tortillas in a pan on the stove.
    1. Spread the sauce on the tortilla.
    1. Add coleslaw.
    1. Add the crispy fish.
    1. Pour on some more sauce.
    1. Top off with salsa.
