INGREDIENTS
- 1kg maotwana, cleaned
- 60ml cooking oil
- 1 onion, chopped
- 1 green pepper, chopped
- 1 tablespoon crushed garlic
- 1 tablespoon coriander
- 1 teaspoon chilli flakes
- 2 tablespoons mild curry powder
- 2 cups chicken stock
- salt and pepper, to taste
METHOD
- In a large pot on medium heat, add cooking oil, onion, green pepper and garlic, sauté until soft.
- Add coriander, chilli flakes, curry powder and stir well. Add more cooking oil if necessary.
- Add the maotwana to the pot and coat well with the onion and spice mixture. Pour in the chicken stock and cook for 30-35 minutes, stirring occasionally. Add salt and pepper if necessary.
- Serve hot with pap or steamed bread.
