CURRIED MAOTWANA (CHICKEN’S FEET)

Serves 6

INGREDIENTS

  • 1kg maotwana, cleaned
  • 60ml cooking oil
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 tablespoon crushed garlic
  • 1 tablespoon coriander
  • 1 teaspoon chilli flakes
  • 2 tablespoons mild curry powder
  • 2 cups chicken stock
  • salt and pepper, to taste

METHOD

  1. In a large pot on medium heat, add cooking oil, onion, green pepper and garlic, sauté until soft.
  2. Add coriander, chilli flakes, curry powder and stir well. Add more cooking oil if necessary.
  3. Add the maotwana to the pot and coat well with the onion and spice mixture. Pour in the chicken stock and cook for 30-35 minutes, stirring occasionally. Add salt and pepper if necessary.
  4. Serve hot with pap or steamed bread.
