Ingredients
- 3 eggs
- 3 feta “disks”
- pesto
- chilli crunch
- chives
- chilli flakes
- coriander
- 3 slices of toast
Method
- Crumb the feta in a warm pan.
- Add the pesto and chilli crunch to where each egg will go.
- Crack the eggs over the feta and cover with a lid to cook on medium heat.
- Once the eggs are ready, dish up and sprinkle chives, coriander and chilli flakes over for extra flavour.
- Season with salt and pepper.
