Ingredients
For the French toast
- 6 hot cross buns, halved
- 2 large eggs
- 250ml milk
- 5ml vanilla essence
For the topping
- 2 cups apples (about 3), chopped
- 1 teaspoon cinnamon
- 2 tablespoons sugar
- 2 tablespoons plain yoghurt (or flavour of choice)
Method
- Beat the eggs, milk and vanilla together until combined.
- Dip the hot cross buns in the mixture and allow it to soak up some of the liquid.
- Fry in butter or oil until golden on both sides.
- Prepare you apple compote by cooking the apples, cinnamon and sugar in a pot until the apples are tender. Remove from heat.
- Plate your French toast by adding one half to a plate, then top with plain yoghurt, apple compote and the other half.
