FRENCH TOAST HOT CROSS BUNS

Ingredients

For the French toast

  • 6 hot cross buns, halved
  • 2 large eggs
  • 250ml milk
  • 5ml vanilla essence

For the topping

  • 2 cups apples (about 3), chopped
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar
  • 2 tablespoons plain yoghurt (or flavour of choice)

Method

  1. Beat the eggs, milk and vanilla together until combined.
  2. Dip the hot cross buns in the mixture and allow it to soak up some of the liquid.
  3. Fry in butter or oil until golden on both sides.
  4. Prepare you apple compote by cooking the apples, cinnamon and sugar in a pot until the apples are tender. Remove from heat.
  5. Plate your French toast by adding one half to a plate, then top with plain yoghurt, apple compote and the other half.
