Ingredients
- 1kg snoek, cleaned and cut open
- 2 fresh lemons
- 3 tablespoons butter
- 1 teaspoon Cajun spice
- ½ teaspoon black pepper
- 1 teaspoon minced garlic
- tinfoil
Method
- Pre-heat the oven to 180C.
- Melt the butter in a microwave and add spices and garlic.
- Squeeze the juice of 1½ lemons and keep one half of the lemon to slice and place on top of the fish.
- Brush the fish with the marinade on both sides and wrap it in foil.
- Place the wrapped fish in the oven for 15 minutes.
- Remove the fish from the oven, remove the foil and grill it at 220C for 10 minutes, or until it has a bit of colour.
- Remove the fish from the oven, and if you still have some marinade left , drizzle it on top.
