  • 1kg snoek, cleaned and cut open
  • 2 fresh lemons
  • 3 tablespoons butter
  • 1 teaspoon Cajun spice
  • ½ teaspoon black pepper
  • 1 teaspoon minced garlic
  • tinfoil


  1. Pre-heat the oven to 180C.
  2. Melt the butter in a microwave and add spices and garlic.
  3. Squeeze the juice of 1½ lemons and keep one half of the lemon to slice and place on top of the fish.
  4. Brush the fish with the marinade on both sides and wrap it in foil.
  5. Place the wrapped fish in the oven for 15 minutes.
  6. Remove the fish from the oven, remove the foil and grill it at 220C for 10 minutes, or until it has a bit of colour.
  7. Remove the fish from the oven, and if you still have some marinade left , drizzle it on top.
