HOMEMADE PORK & LEEK SAUSAGE ROLLS

Indulge in the comforting delight of these flaky English sausage rolls infused with aromatic sage and butterfried leeks.

Ingredients

For the sausage rolls

  • 1 leek, cleaned and finely chopped
  • 1 teaspoon (5ml) olive oil
  • 1 teaspoon (5ml) butter
  • 300g pork mince
  • 2 garlic cloves, finely grated
  • 2 tablespoons (30ml) fresh parsley, chopped
  • 4 sage leaves, finely chopped
  • 1 teaspoon (5ml) salt
  • 1 teaspoon (5ml) pepper
  • 1 teaspoon (5ml) allspice
  • ½ teaspoon (2.5ml) dried tarragon
  • 400g frozen puff pastry roll, thawed
  • 1 egg, beaten

For the dipping sauce

  • ¼cup (60ml) mayonnaise
  • 2 teaspoons (10ml) hot English mustard
  • 1 teaspoon (5ml)honey
  • 1 tablespoon (15ml) Worcestershire sauce

Method

For the sausage rolls

  1. Heat the oil and butter in a frying pan; add the leeks and fry until soft and cooked.
  2. Add the pork mince, garlic, parsley, sage, salt, pepper, allspice, dried tarragon, and cooked leeks to a bowl. Mix to combine without overworking the meat.
  3. Preheat the oven to 200ºC and line a baking sheet with baking paper.
