LAMB TACOS

Serves 2

Ingredients

  • 8 small tortillas
  • 125ml cooking oil
  • 1 teaspoon salt
  • lamb shoulder (cut into strips)
  • steak and chops spice
  • 2 tablespoons butter
  • rosemary (fresh)
  • ⅓ cup sweet chilli sauce
  • 2 cups grated cheddar cheese

Method

  1. Start by placing a medium pan on medium heat and pour cooking oil into the pan.
  2. When the oil is hot enough, slide each small tortilla into the pan and fry for 2 minutes or until golden brown.
  3. Using a tong, flip and fold the tortilla in half, bend it into the taco shell, and fry the other sides as well until crispy and golden brown. Do the same with the rest of the tacos.
  4. Place the taco shells on a paper towel and sprinkle with some salt immediately to add flavour.
  5. Using the same pan, stir-fry the slices of lamb and season with steak and chops spice. Add butter, garlic and rosemary.
  6. When the butter has melted, baste the lamb with butter and let it cook for 4 minutes or until browned, tender and juicy.
  7. Fill your taco shells with lamb and top it off with a teaspoon of sweet chilli.
  8. Add cheese and melt the tacos in the oven for 1 minute.
  9. Garnish with fresh parsley and serve!
