This dish is perfect for a quick and easy alfresco lunch. Serve it with a fresh green salad, some fresh bread and a glass of Sauvignon Blanc.
INGREDIENTS
- 1 kg king prawns, defrosted and deveined
- 4 cloves garlic, finely chopped
- 4 tablespoons chilli oil
- juice of ½ lemon
- salt and pepper to taste
- 1 tablespoon unsalted butter
- handful of fresh coriander, roughly chopped
METHOD
- Heat the butter and chilli oil in a pan.
- Add the prawns and garlic and fry until the prawns turn pink and are cooked. This takes about 4-5 minutes.
- Turn the heat off and add the lemon juice, seasoning and coriander.
- Toss gently.
- Serve immediately while still hot.
