MACERATED STRAWBERRIES & BURRATA SALAD

Serves: 4

INGREDIENTS

  • 400g strawberries, trimmed and sliced in rounds
  • 3 tablespoon balsamic glaze
  • 1 tablespoon olive oil
  • 50g wild rocket
  • 50g rocket
  • 1 burrata
  • 1 red onion, peeled and thinly sliced
  • ¼ cup white wine vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon sugar
  • 50g pistachios, chopped
  • 30g mint, chopped

METHOD

  1. Mix the white wine vinegar, salt, sugar, and ¼ cup of water in a bowl till the sugar and salt have dissolved. Place red onions in the liquid, mix, and set aside for at least 10 minutes.
  2. Add the strawberries with 2 tablespoons of balsamic glaze to a bowl and lightly toss to coat, set aside for 5 minutes.
  3. Arrange the rocket on a platter, and top it with macerated strawberries, pickled red onions, and mint.
  4. Carefully tear the burrata and top the salad with the pieces.
  5. Sprinkle over the chopped pistachios.
  6. Mix the 1 tablespoon of balsamic glaze with the olive oil and drizzle over the salad.
