Mojito is a traditional Cuban cocktail containing only rum, lime, mint, simple syrup and soda. Adding mango gives a fruity twist to the original classic. The addition of rum is optional and is equally delicious with the mango.
Serves 4

Ingredients
- 4 sprigs mint leaves
- 100ml fresh mango puree,
- 100ml simple syrup (see recipe on Granita)
- 500ml soda
- extra cubed mango for garnish (optional)
Method
1. In three glasses, gently muddle the mint leaves, fresh mango puree, and simple syrup together to release the flavours and oils.
2. Fill the glasses with ice and top each one off with soda water. Stir gently to combine.
3. Garnish with additional mint leaves and serve with mango cubes on the side.
