INGREDIENTS
- 500g beef
- 2 tomatoes, chopped
- 1 onion, chopped
- 3 tablespoons cooking oil
- 2 dried bay leaves
- 1 teaspoon chilli flakes
- 1 teaspoon mild masala curry
- 1 tablespoon madras curry paste
- ½ teaspoon paprika
- ½ teaspoon cayenne pepper
- ½ teaspoon ground cumin
- 1 teaspoon cardamom powder/seeds
- 1 teaspoon ground coriander
- 1 tablespoon beef seasoning
- 2 teaspoons ginger and garlic paste
- 2 or more cups of water
- 1 ciabatta bun per person
METHOD
- Rinse and cut the beef into cubes.
- In a pot, heat cooking oil on medium heat.
- Add chopped onion and bay leaves, allow to simmer till onion is translucent.
- Add chilli flakes, mild masala curry, madras curry paste, paprika, cayenne pepper, cumin cardamom powder, coriander powder and garlic ginger paste. Mix and simmer for 30 seconds.
- Add in the cubes of beef and beef seasoning. Mix well while coating the beef with the spices.
- Cover the pot with a lid and allow to cook for 5 minutes, then stir.
- Cover with lid again and cook for another 5 minutes, then add the chopped tomatoes.
- Stir everything together, then cover with a lid and allow to cook for 10 minutes without adding water. Add a bit of salt if needed.
- After that, add 2 cups of water and allow the curry to cook for a further 30 minutes.
- Keep checking on the pot every 15 minutes or so, add small amounts of water in between cooking if needed.
- Serve as bunny chow by cutting out a hollow centre from the ciabatta buns, then fill with the curry. Serve.
