MOCHA AMARULA BAKED OATS

Ingredients

  • 1 cup rolled oats
  • 2 ripe bananas, mashed
  • ¼ cup Coffee Amarula liqueur (or any liqueur)
  • ½ cup milk
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup chopped nuts (e.g., pecans or walnuts)
  • ¼ cup dark chocolate, chopped or chips
  • butter or cooking spray for greasing the baking dish

Method

  1. Preheat your oven to 180°C. Grease a baking dish with butter or cooking spray.
  2. In a mixing bowl, combine the mashed bananas, Amarula liqueur, milk, honey (or maple syrup), and whisk until well combined.
  3. Stir in the rolled oats, ground cinnamon, ground nutmeg, salt, and baking powder. Mix until everything is well incorporated.
  4. Add the chopped nuts and dark chocolate chips (if using) to the mixture. Stir until they are evenly distributed throughout the batter.
  5. Pour the oat mixture into the greased baking dish and spread it evenly.
  6. Bake in the oven for about 25-30 minutes, or until the top is golden brown and the oats are set. You can insert a toothpick into the centre to check; it should come out clean.
  7. Allow the Amarula baked oats to cool for a few minutes before eating. You can serve them warm with a drizzle of Amarula liqueur or a dollop of yogurt, if desired.

Optional toppings: You can add more texture and flavour by topping the baked oats with additional nuts, fresh berries, or a sprinkle of powdered sugar.
