- 1 cup rolled oats
- 2 ripe bananas, mashed
- ¼ cup Coffee Amarula liqueur (or any liqueur)
- ½ cup milk
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
- 1 teaspoon baking powder
- ½ cup chopped nuts (e.g., pecans or walnuts)
- ¼ cup dark chocolate, chopped or chips
- butter or cooking spray for greasing the baking dish
Method
- Preheat your oven to 180°C. Grease a baking dish with butter or cooking spray.
- In a mixing bowl, combine the mashed bananas, Amarula liqueur, milk, honey (or maple syrup), and whisk until well combined.
- Stir in the rolled oats, ground cinnamon, ground nutmeg, salt, and baking powder. Mix until everything is well incorporated.
- Add the chopped nuts and dark chocolate chips (if using) to the mixture. Stir until they are evenly distributed throughout the batter.
- Pour the oat mixture into the greased baking dish and spread it evenly.
- Bake in the oven for about 25-30 minutes, or until the top is golden brown and the oats are set. You can insert a toothpick into the centre to check; it should come out clean.
- Allow the Amarula baked oats to cool for a few minutes before eating. You can serve them warm with a drizzle of Amarula liqueur or a dollop of yogurt, if desired.
Optional toppings: You can add more texture and flavour by topping the baked oats with additional nuts, fresh berries, or a sprinkle of powdered sugar.
