Ingredients
- 1 can four bean mix
- 1 can black beans
- 3 spring onions (bulb and greens, chopped)
- ½ red onion, chopped
- ½ yellow pepper, chopped
- ½ red pepper, chopped
- handful chopped parsley
- 1 teaspoon crushed garlic
- 1 teaspoon flavourful/mild curry
- ¼ teaspoon black pepper
- 1 teaspoon bbq spice
- 1 beef stock cube
- 1 tablespoon cooking oil
Method
- Drain the brine from the beans and set aside.
- Dissolve beef cube in 1½ cups hot water and set aside. Leave some water, about 1 to ½ a cup that you might need.
- In a pot, heat cooking oil over medium heat.
- Add red onion, spring onion, yellow and red pepper and cook till onion and peppers are slightly softened, but not browned.
- Add garlic, parsley curry, black pepper and BBQ spice and cook for 1 to 2 minutes while stirring.
- Stir in dissolved beef stock, beans and black pepper
- Cover and cook for about 10 minutes.
- Serve in small bowls as a starter with or without a side of bread or soup rolls.
