  • 1 can four bean mix
  • 1 can black beans
  • 3 spring onions (bulb and greens, chopped)
  • ½ red onion, chopped
  • ½ yellow pepper, chopped
  • ½ red pepper, chopped
  • handful chopped parsley
  • 1 teaspoon crushed garlic
  • 1 teaspoon flavourful/mild curry
  • ¼ teaspoon black pepper
  • 1 teaspoon bbq spice
  • 1 beef stock cube
  • 1 tablespoon cooking oil


  1. Drain the brine from the beans and set aside.
  2. Dissolve beef cube in 1½ cups hot water and set aside. Leave some water, about 1 to ½ a cup that you might need.
  3. In a pot, heat cooking oil over medium heat.
  4. Add red onion, spring onion, yellow and red pepper and cook till onion and peppers are slightly softened, but not browned.
  5. Add garlic, parsley curry, black pepper and BBQ spice and cook for 1 to 2 minutes while stirring.
  6. Stir in dissolved beef stock, beans and black pepper
  7. Cover and cook for about 10 minutes.
  8. Serve in small bowls as a starter with or without a side of bread or soup rolls.
