Ingredients
- 1 cup cream
- ½ cup fresh milk
- 4 whole garlic cloves
- 2 tablespoon unsalted butter, melted
- 6 potatoes peeled and slices into thin slices, rinse
- 1 tsp salt and pepper
- 1 cup freshly grated white cheddar
- 1\2 cup grated Parmesan
- 2 tsp fresh thyme
- 1 teaspoon nutmeg
Method
- Preheat oven to 180°C
- In a large saucepan add butter, milk, garlic, half of the thyme and nutmeg simmer until hot (3-4 min)
- Add sliced potatoes, simmer for 9 minutes
- In a large oven dish, place the potatoes by layering, add sauce then the 2 cheeses (cheddar and parmesan) and a sprinkle of thyme
- Repeat the layers until done, finish off with grated cheddar
- Bake: bake for 30 minutes in the preheated oven until the potatoes in the middle are soft (use a knife to test) and golden brown in colour
