Potato Au Gratin

(Serves 4)


  • 1 cup cream
  • ½ cup fresh milk
  • 4 whole garlic cloves
  • 2 tablespoon unsalted butter, melted
  • 6 potatoes peeled and slices into thin slices, rinse
  • 1 tsp salt and pepper
  • 1 cup freshly grated white cheddar
  • 1\2 cup grated Parmesan
  • 2 tsp fresh thyme
  • 1 teaspoon nutmeg


  • Preheat oven to 180°C
  • In a large saucepan add butter, milk, garlic, half of the thyme and nutmeg simmer until hot (3-4 min)
  • Add sliced potatoes, simmer for 9 minutes
  • In a large oven dish, place the potatoes by layering, add sauce then the 2 cheeses (cheddar and parmesan) and a sprinkle of thyme
  • Repeat the layers until done, finish off with grated cheddar
  • Bake: bake for 30 minutes in the preheated oven until the potatoes in the middle are soft (use a knife to test) and golden brown in colour
