Serves: 5-6 (makes approx. 30 fritters)
INGREDIENTS
For the fritters
- 500ml cooked pumpkin
- 10ml baking powder
- 1 egg
- 1 cup flour
- 2ml salt
- cooking oil
For the syrup
- 1 tablespoon butter
- 200ml milk
- 175ml cold water
- 1½ cups sugar
- 1 tablespoon custard powder or corn starch
- 1 teaspoon vanilla
METHOD
- Finely mash the cooked pumpkin. Ensure it has cooled slightly before proceeding.
Add the flour, baking powder, salt and beaten egg to the mashed pumpkin. Mix well until fully combined. - Heat the cooking oil in a frying pan or electric fryer. Scoop teaspoons of the batter into the hot oil. Fry the batter on both sides until golden brown and cooked through.
Drain the fritters on kitchen paper and transfer them to a serving dish. - Make the syrup: heat the butter, sugar, and milk to boiling point in a saucepan. Dissolve the custard powder in the cold water and stir it into the milk mixture. Add the vanilla extract and heat the mixture to boiling point.
- Serve by pouring the warm syrup over the fritters. Serve hot.
