Ingredients
- 500g pork fillet, thinly sliced for quick cooking
- 2 large eggs
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- Oil for pan-frying
- Cooked white rice (consider using quick-cook or pre-cooked rice)
- Pre-cut stir-fry vegetable mix (to save on prep time)
- Store-bought sauce (such as sweet and sour or your preferred Asian sauce)
- Optional garnishes: chopped green onions or cilantro, sesame seeds
Method
- Season the flour with salt, pepper, and garlic powder on a plate.
- Beat the eggs in a shallow bowl. Coat the pork slices first in egg and then in the seasoned flour.
- Heat a few tablespoons of oil in a large skillet over medium-high heat.
- Fry the pork in batches until golden and crisp, about 2-3 minutes per side.
- Remove and set aside on a paper towel-lined plate.
- Wipe the skillet clean, add a little more oil, and toss in the stir-fry vegetables.
- Cook for about 2-3 minutes until slightly softened but still crunchy.
- Return the pork to the skillet with the vegetables, lower the heat to medium, and pour in the sauce. Toss to combine until everything is heated through.
- Serve the pork and vegetables over rice. Garnish with green onions, cilantro, and sesame seeds if desired.
