ROOIBOS TEA CHICKEN

This chicken is extra delicious in this easy rooibos tea marinade. You can make the marinade and keep it in the fridge for about 2 weeks.

Serves: 6

INGREDIENTS

  • 2 cups strong rooibos tea
  • ½ cup oil
  • ½ cup tomato puree
  • ½ cup chutney
  • 4 tablespoons white wine vinegar
  • 1 teaspoon mustard powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons ground ginger
  • 9 chicken pieces
  • 1 teaspoon salt and freshly ground black pepper

METHOD

  1. Mix the rooibos tea, oil, tomato puree, chutney, vinegar, mustard powder, onion powder, garlic powder, and ground ginger in a saucepan. Cook slowly for 10 minutes until the sauce is nice and thick. Let the sauce cool completely.
  2. Spread the sauce over the chicken pieces. Place the chicken in a Ziplock bag and let it marinate for about an hour or more; the longer, the better.
  3. Season the chicken with salt and pepper and grill over moderate heat until cooked and golden brown.
