SAUCY CHOCOLATE & COCONUT PUDDINGS

This rich baked pudding is one for chocolate lovers. I’ve baked them in individual ramekins but you can make one large pudding if you prefer.

Serves 6
Cooking time: 30 minutes
Prep time: 20 minutes

Ingredients

For the chocolate pudding

  • 250ml (1 cup) cake flour
  • 7.5ml (1½ teaspoons) baking powder
  • 200ml caster sugar
  • pinch of fine salt
  • 50ml cocoa
  • 125ml (½ cup) desiccated coconut
  • 50g butter
  • 1 large egg
  • 180ml (¾ cup) milk
  • 5ml (1 teaspoon) vanilla extract
  • 100g dark chocolate, chopped into small chunks
  • cream or ice cream, to serve (optional)

For the chocolate sauce

  • 250ml (1 cup) treacle sugar
  • 50ml cocoa powder
  • 250ml (1 cup) boiling water

Method

  1. Preheat your oven to 170°C. Grease six 250ml ramekins and place them on a baking tray.
  2. Sift the flour, baking powder, sugar, salt and cocoa into a bowl. Stir in the coconut.
  3. Melt the butter and add to the dry ingredients with the egg, milk and vanilla. Mix until just combined, then stir in the dark chocolate.
  4. Divide the batter between the ramekins. Make the sauce by combining the sugar, cocoa and water and whisking until smooth. Carefully pour some sauce into each ramekin (it will sit on top of the batter).
  5. Place the baking tray in the oven and bake for 30 minutes, or until the cake is cooked through. When you dig your spoon into the ramekin a dark, rich sauce will be hiding at the bottom! Serve warm with cream or ice cream.
