Ingredients
- seafood (prawns, hake fillets, smoked salmon cut offs)
- finely chopped carrot
- green, red, and yellow pepper, chopped
- 1 sliced red onion
- mashed potato
- parmesan cheese
- cheddar cheese
- fish spice
- garlic mince
- olive oil
- 1 fresh lemon, to garnish
- fresh dill, to garnish
- salt & pepper
- lemon zest
- 4 tablespoons , flour
- ½ cup breadcrumbs
- 1 cup milk
- 1 tablespoon butter
- white cheddar cheese
- chopped fresh basil and fresh coriander
Method
For the white sauce
- Melt the butter in a saucepan on medium heat.
- In a cup, add cold milk and flour and stir until it is smooth. Add the milk mixture to the saucepan slowly while stirring using a whisk to make sure you don’t have lumps.
- Season with salt, pepper, Usisi garlic flakes and then add your white cheddar cheese until you get a smooth consistency.
For the seafood
- Pre-heat the oven to 180C.
- Season the prawns with salt and pepper, and lemon zest. Then sauté the prawns in a pan with oil, for 3 minutes and set aside.
- Season the hake with fish spice and drizzle a bit of flour over them. In the same pan, add some butter and fry the fish for 2 minutes on each side. The fish will cook further in the oven.
- In an oven dish, layer the seafood, vegetables and herbs, and the sauce. Then place the mashed potatoes on top of everything, until you cannot see what is underneath.
- Etch lines into the mashed potato with a fork; be as creative as you want to.
- Drizzle the breadcrumbs over the mashed potato.
- Place the cottage pie in the oven for 20 minutes to allow the vegetables to cook.
- Garnish with lemon and dill.
