- salt and pepper to taste
- 1 tablespoon poultry rub/seasoning of your choice
- 1 tablespoon olive oil
- 1 tablespoon butter
- 250g mushrooms, sliced
- 1 onion, sliced

- 1 tablespoon flour
- ¼ cup chicken stock
- 1 tablespoon Worcestershire sauce
- ¼ cup cream
- chopped fresh parsley and fresh thyme sprigs for garnishing
METHOD
- Heat olive oil over medium-high heat then season chops with salt, pepper and poultry seasoning. Fry for 4 minutes per side then remove and set aside.
- Turn the heat down then, in the same pan melt butter. Add mushrooms, onion, garlic, Italian seasoning and paprika. Fry for a few minutes until soft. Stir in flour, stock and Worcestershire sauce until smooth, keep stirring for about 3 minutes to cook out the flour. Then stir in the fresh cream.
- Return the chops to the sauce and let everything simmer together for 5 minutes, garnish with the fresh herbs then serve hot with sides of your choice. Enjoy!
