Ingredients
- 1 pack Shin Ramyun Instant Ramen
- 500 g boneless chicken thighs
- ½ teaspoon salt, ½ teaspoon black pepper, 1 teaspoon paprika & 1 teaspoon garlic powder (for the chicken)
- 2 table spoon mayonnaise & sweet chilli sauce (for the chicken)
- 1 teaspoon garlic & ginger, minced
- ¼ cup Sriracha sauce
- ½ Chicken bouillon cube
- ½ teaspoon white pepper
- 1 teaspoon dark soy sauce
- ½ table spoon light soy sauce
- 1 teaspoon balsamic vinegar
- ¼ cup double cream
- Green onion, for garnish
- Vegetable oil
Method
For the chicken:
- Season chicken thighs with salt, pepper, paprika and garlic. Powder. Add oil and rub the seasonings on the chicken.
- In a bowl, add mayonnaise and sweet chilli sauce. Mix until combined.
- Spread the mayo + sweet chilli mixture on each chicken piece.
- Air fry the chicken for 15 minutes in a preheated air fryer at 190 degrees Celsius, flipping halfway.
Once cooked, spread some more mayo + sweet chili sauce mixture on top.
For the noodles:
- Heat 1 table spoon oil in a pan then add garlic & ginger. Sauté till fragrant.
- Add sriracha sauce and mix.
- Add the pack seasoning and white pepper. Stir.
- Add dark & light soy sauce, plus 550 ml of hot water and the vegetable mix (found in the packet).
- Bring to a simmer and add the noodles. Cook as per packet instructions.
- Add double cream and stir.
Serve the noodles with the broth and chicken and garnish with green onions.
