Refreshing Chicken Salad with Grilled Sweet Peppers
You will need:
- 4 diced chicken breast fillets
- 200g mixed-leaf salad
- 1 cup cocktail tomatoes
- 1 sliced Avocado
- 1 cup diced feta cheese
- ½ steamed sweet corn
- 4 large sweet peppers
- Dressing of your choice
- Dice your chicken breasts and season with the following:
- Chicken seasoning
- Smoked paprika
- Black pepper
- In a non-stick pan, heat a bit of oil and cook chicken for about 5-10 minutes, continuously turning. Once cooked, put the chicken aside and let it cool.
- In the same pan, cook your sweet peppers for about a minute on each side or until soft and charred.
- Sweetcorn bites: grill steamed sweetcorn over a gas burner for about 5 minutes each or until charred.
Layering your salad
- Lay out your salad leafs in a bowl.
- Add in chopped tomatoes, sweet peppers, sliced avocado, sweet corn, chicken, feta and enjoy with a dressing of your choice.
Optional: sprinkle salad with some chilli flakes.
Tikka Sauce
You will need:
- 1 Cup Plain yoghurt
- 1 tsp c1rushed ginger and garlic
- 1 tbspn lemon juice
- Paprika, turmeric, ground coriander, chilli powder, as well as salt and pepper.
Combine all the ingredients and mix well.
