TIKKA CHICKEN SALAD

Refreshing Chicken Salad with Grilled Sweet Peppers

You will need:

  • 4 diced chicken breast fillets
  • 200g mixed-leaf salad
  • 1 cup cocktail tomatoes
  • 1 sliced Avocado
  • 1 cup diced feta cheese
  • ½ steamed sweet corn
  • 4 large sweet peppers
  • Dressing of your choice
  • Dice your chicken breasts and season with the following:
    • Chicken seasoning
    • Smoked paprika
    • Black pepper
  • In a non-stick pan, heat a bit of oil and cook chicken for about 5-10 minutes, continuously turning.  Once cooked, put the chicken aside and let it cool.
  • In the same pan, cook your sweet peppers for about a minute on each side or until soft and charred.
  • Sweetcorn bites: grill steamed sweetcorn over a gas burner for about 5 minutes each or until charred.

Layering your salad

  • Lay out your salad leafs in a bowl.
  • Add in chopped tomatoes, sweet peppers, sliced avocado, sweet corn, chicken, feta and enjoy with a dressing of your choice.

Optional: sprinkle salad with some chilli flakes.

Tikka Sauce

You will need:

  •  1 Cup Plain yoghurt
  • 1 tsp c1rushed ginger and garlic
  • 1 tbspn lemon juice
  • Paprika, turmeric, ground coriander, chilli powder, as well as salt and pepper.

Combine all the ingredients and mix well.
