Ingredients for the Usu
- 2kg beef tripe, clean and cut into cubes
- water enough to cover the tripe
- 1 beef stock cube
- 1 tablespoon garlic
- 1 tablespoon paprika
- salt and pepper to taste
Method
- To a large pot, add the beef tripe and enough water to cover the tripe.
- Add the beef stock cube, garlic, salt, and paprika.
- Cover the pot with the lid and cook over medium heat for 2 hours, until the tripe is soft and tender.
- Let it simmer for at least 30 minutes uncovered to allow the liquid to reduce until a thick sauce forms.
- Add salt to taste. Serve hot with Ujeqe.
Ingredients for the Ujeqe
Time: 45 minutes
Serves 4-6
- 3 cups all-purpose flour
- 1½ sachets instant yeast
- 30ml cooking oil
- 2 tablespoons baking powder
- 3 tablespoon sugar
- 1 teaspoon salt
- 2 tablespoons butter
- 1 cup lukewarm water, plus extra for steaming
Method
- Sift flour.
- Mix all the dry ingredients.
- Add water slowly, mixing with your hands until well combined.
- Cover your dough and let it rise to double the size.
- Fill a large deep pot halfway with water and bring to a boil.
- Grease cups and half-fill with the dough.
- Cook for 20-30 minutes.
- Remove from the stove and cool.
