USU & UJEQE (Beef Tripe & Traditional Steamed Bread)

Serve 4-6
Time: 3 hours

Ingredients for the Usu

  • 2kg beef tripe, clean and cut into cubes
  • water enough to cover the tripe
  • 1 beef stock cube
  • 1 tablespoon garlic
  • 1 tablespoon paprika
  • salt and pepper to taste

Method

  1. To a large pot, add the beef tripe and enough water to cover the tripe.
  2. Add the beef stock cube, garlic, salt, and paprika.
  3. Cover the pot with the lid and cook over medium heat for 2 hours, until the tripe is soft and tender.
  4. Let it simmer for at least 30 minutes uncovered to allow the liquid to reduce until a thick sauce forms.
  5. Add salt to taste. Serve hot with Ujeqe.

Ingredients for the Ujeqe

Time: 45 minutes
Serves 4-6

  • 3 cups all-purpose flour
  • 1½ sachets instant yeast
  • 30ml cooking oil
  • 2 tablespoons baking powder
  • 3 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1 cup lukewarm water, plus extra for steaming

Method

  1. Sift flour.
  2. Mix all the dry ingredients.
  3. Add water slowly, mixing with your hands until well combined.
  4. Cover your dough and let it rise to double the size.
  5. Fill a large deep pot halfway with water and bring to a boil.
  6. Grease cups and half-fill with the dough.
  7. Cook for 20-30 minutes.
  8. Remove from the stove and cool.
