If this is your first year having to cook the Christmas meal, or possibly you have certain family members who have been less than complimentary about your previous Christmas meals, try these recipes from the Krazy Kiwi Team, they are tried and tested to be completely fail proof and guaranteed to have everyone coming back for more.
1. Roast Turkey with Herb Butter
Ingredients:
- 1 whole turkey
- 1 cup (250g) unsalted butter, softened
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- Salt and pepper to taste
- 1 lemon, halved
- 4 cloves garlic, minced
Instructions:
- Preheat the oven to 325°F (160°C).
- In a bowl, mix the softened butter with chopped herbs, minced garlic, salt, and pepper.
- Pat the turkey dry with paper towels. Rub the herb butter mixture over and under the skin of the turkey.
- Place the lemon halves and any remaining herbs inside the turkey cavity.
- Roast the turkey in the preheated oven until the internal temperature reaches 165°F (74°C), approximately 15 minutes per pound.
- Allow the turkey to rest for 20 minutes before carving.
2. Glazed Gammon with Pineapple
Ingredients:
- 1 gammon joint
- 1 cup (250ml) pineapple juice
- 1/2 cup (125ml) honey
- 1/4 cup (60ml) Dijon mustard
- Cloves (for studding)
- Pineapple slices (for garnish)
Instructions:
- Preheat the oven to 350°F (180°C).
- Place the gammon joint in a large roasting pan.
- In a bowl, mix pineapple juice, honey, and Dijon mustard to create the glaze.
- Score the surface of the gammon in a diamond pattern and stud with cloves.
- Brush the glaze over the gammon, ensuring it’s well coated.
- Roast in the preheated oven for about 1.5 to 2 hours, basting with the glaze every 30 minutes.
- Garnish with pineapple slices before serving.
3. Vegan Stuffed Butternut Squash
Ingredients:
- 2 medium-sized butternut squashes, halved and seeds removed
- 1 cup (200g) quinoa, cooked
- 1 can (400g) chickpeas, drained and rinsed
- 1 red onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Preheat the oven to 375°F (190°C).
- Place the butternut squash halves on a baking sheet, cut side up.
- In a bowl, mix cooked quinoa, chickpeas, red onion, garlic, cumin, coriander, salt, and pepper.
- Stuff each butternut squash half with the quinoa mixture.
- Bake in the preheated oven for about 40-45 minutes or until the squash is tender.
- Garnish with fresh parsley before serving.
