BOERE BREKKIE BUN ROOSTERKOEK (IROSTILE)

Ingredients

  • 1 kg white bread flour
  • pinch of salt
  • ¼ cup sugar (you can adjust according to your taste)
  • ¼ cup oil
  • 10g instant dry yeast
  • 500 – 700ml lukewarm water

Method

  1. Mix flour, salt sugar and yeast in a bowl.
  2. Add oil to the flour mixture and mix with your fingers until a crumbly texture forms.
  3. Add water to the dry ingredients until a soft dough forms.
  4. Knead for about 10 minutes on a floured surface. Once fully incorporated, put the dough back in the bowl and cover until it doubles in size.
  5. Knead again and form into 10 – 12 balls.
  6. Flatten the dough balls and dust with flour.
  7. Cook on the braai griddle on coals for about 5 – 10 minutes on each side.

For the filling

  • half an avocado
  • a handful of rocket leaves
  • 2 eggs
  • boerewors
  • baked beans
  • grated Gouda cheese

Spread smashed avocado on one side of the bread, add rocket salad, followed by soft scrambled egg. Add boerewors, topped with baked beans and a generous portion of grated cheese.
